Waldmann Brewery and Wurstery

Waldmann is the oldest commercial stone building in St Paul, MN. In 1857 German immigrant, Anton Waldmann, opened a German Lager Saloon, which operated until 1862. The building was utilized as private housing for 157 years, then fell vacant for 8 years until Tom Schroeder purchased and re-discovered the place's beer history. Tom renovated the building as a taproom and built a modern 15 bbl system behind. Trying to get as much authentic flavor from the beers, Tom enlisted the help of brewery designer and head brewer, Drew Ruggles. Drew noted the raw materials of 160 years ago no longer exist, but we could find analogs of the malt in Europe and with meted use of heritage hop varieties, like Cluster, could provide a semblance of history in a modern single yeast strain beer. Basically, if our 1857 brewer were alive today, what would he make on our modern system?
