Hi everybody! Ready for the Best Brew Challenge? What are you going to brew tomorrow?

Here at Mr. Malt® the recipe is decided: we are brewing a Dark Saison. Courious about it? Then read on.

  • OG: 1.047
  • FG: 1.004
  • ABV: 5.61%
  • IBU: 32.68

Grain bill

  • 4.5 kg BEST Pilsen Malt
  • 3.1 kg BEST Vienna Malt
  • 1.5 kg BEST Special X Malt
  • 0.4 kg BEST Black Malt eXtra

We are using an infusion mash @ 66°C  to enhance body in contrast with the sourness of dark malts, due to the low degree.

Hops

  • Mistral 30 g – 60 min.
  • Mistral 40 g – 30 min.
  • Barbe Rouge 80 g – 5 min.
  • Barbe Rouge 100 g – 7 days (Dry Hop)

We couldn’t wait to experiment with these brand new, aromatic French hops. Mistral has a very subtle character, its aroma goes towards rose, melon, lychee. Ideal in late and dry hopping where a very nice and fine fruit character is expected, with clean tasting bitterness. Barbe Rouge has a very fine red fruits & bubble gum aroma with spicy notes, it is slightly citrus and herbal. A new French aroma hop with lot of flavour, higher oil and alpha content, Barbe Rouge offers a non-lingering and refined bitterness.

Yeast

  • Fermentis SafAle™ BE-134

This new yeast strain is recommended for Belgian Saison-style beers and is characterized by a particularly high attenuation. It gives fruity aromas with a spicy character such as clove notes. This strain will produce highly refreshing and drinkable beers.
